Corbin From Decor-Eat Sharing Her Recipe for Peach Pizza with Ricotta Chive and a Balsamic Reduction

Hi Guys, I'm Corbin from Decor-Eat, a cooking and home decor blog with a drifting eye for fashion and style. Like all of you, I'm a huge fan of GlamourMash, and am so excited to be visiting today. Mad props to Holly for her impeccable style and creativity that make GlamourMash such a treat!

Being from Atlanta, Georgia, I love a good peach recipe in the summer. You've heard it, and the rumors are true. Georgians love their peaches. With our yogurt, dessert...pizza?? Yes, please. This peach, ricotta chive pizza is an awesome blend of flavors I love - salty, sweet and creamy in every bite. In other words, it's really freaking good. And, a little unusual making it a fun twist for you pizza fanatics. 

Peach Pizza with Ricotta Chive and a Balsamic Reduction

INGREDIENTS
1 package of Whole Foods Whole Wheat Pizza Dough
1/2 cup ricotta cheese, part skim
1 tbsp chives, chopped
3 tbsp olive oil
1/2 lemon, squeezed
2 peaches
1/4 cup mozzarella cheese, reduced fat 2% milk
1/2 cup balsamic vinegar
salt & pepper to taste

First things first, whether you picked up the frozen or just refrigerated dough from Whole Foods you need to take it out of the fridge/freezer and let it come to room temperature. Frozen will probably take about 4-6 hours, so I'd recommend you get the refrigerated dough. This should only take 30 mins give or take. To do this, poor a little bit of olive oil (about a tsp) in a bowl with the dough. While this comes to room temp, preheat the oven to 500 degrees and start preparing the other ingredients.

In a bowl, mix ricotta cheese, 2 tbsp olive oil, juice from one lemon, chopped chives together, and salt and pepper. Stir and set aside. 


Next, wash and pat dry the peaches, and slice them into thin wedges. Since peaches have pits, the best way to do this is to cut from the top of the peach to the bottom, and then make another cut a little bit to the left (or right) going from the same starting and ending points so that you carve out a wedge. Continue this for the rest of the fruit. 

By this time, the dough should be room temperature. Rub 1 tsp of olive oil on a 16" cooking pan. Use a rolling pin to roll the dough out evenly on the cooking sheet. Place the crust in the oven for about 10 minutes. Remove crust from oven, let cool for about 5-10 minutes. Spread remaining 1 tsp of olive oil on the crust, but be careful because it will still be hot from the oven. 

Next, use a spatula to evenly spread the ricotta, chive and lemon mixture on the crust leaving about an inch around the border. Layer peach slices on top and sprinkle with mozzarella cheese. Place back in the oven and cook for another 10 minutes.


When about 5 minutes are left, heat 1/2 cup of the balsamic vinegar in a small-medium sauce pan over medium-high heat to make a balsamic reduction. Watch this closely. You want the mixture to visibly thicken, which should be about when the 1/2 cup reduces to 1/4 cup of liquid. Be careful not to burn, and place on simmer if needed for pizza to finish cooking.
